I've been researching the perfect cookie...you know those cookies that are crispy on the outside, but chewy inside. After extensive taste testing I've adapted what I've found to invent my very own luscious Valentine's Day Cookie.
Ingredients
350g plain flour
1 tspn Bicarbonate of Soda
225g butter
200g golden caster sugar
150g light brown soft sugar
1 tspn vanilla essence
2 eggs
100g bar of Green and Black's Dark Chocolate with Raspberry chopped (it adds a fruity twist!)
150g bar of dark chocolate chopped
1 sprinkle of Love xxxx
Method
Cream the butter and sugar and beat in the eggs and vanilla essence. Mix the flour and bicarb together in a bowl and then add gradually to the creamed mixture. Stir in the chopped chocolate.
The dough is very soft and gooey.
Using a spoon, blob the dough onto a greased baking tray and pop into a pre-heated oven at 190 degrees. I I made three baking trays worth of cookies!
Serve with a bowl of chocolate sauce made by heating a small pot of single cream and melting in half a bar of dark chocolate. Perfect for two.
If you have a secret Valentine or if your older children want to give a present to their crushes, just pop a few cookies into an organza bag. Who could resist a bag of these sweet treats!
Even after all this, there will still be plenty of cookies left to give the kids...you can bribe them to give you and your partner some much needed alone time! These really are the ultimate Valentine's Day Cookies!!
